Kii washing station is located in Kyrinyaga County in the Central highlands of Kenya and is part of the Rungeto Farmers Co-operative. It is surrounded by smallholder farmers who grow their coffee in rich and fertile red volcanic soil.
Once the ripe coffee cherries have been picked they are taken to the Kii washing station to be pulped. The coffee is then channelled into large tanks where dry fermentation occurs. Once fermentation is complete, the mucilage is washed off the coffee beans and they are soaked for another 24 hours to allow amino acids and proteins to develop. The beans are then dried in the sun on raised beds for 10 days.
